BBQ Chicken Flatbread Pizza

Let's talk about Pizza for a little bit.  It's DELICIOUS.  I don't think I know anyone (besides my youngest daughter which at 3 years old hated, but that's changed now that she's a bit older) who doesn't LOVE a good pizza.

As you embark on a healthier journey to better your nutrition or lose some weight you think about all the good things you'll need to give up, right?  

Well, one thing I knew about myself was that I needed BALANCE in my journey.  Yes, feeding myself good healthy food is important, but I'm not perfect and don't want to be.  I also want to enjoy certain foods and not feel guilty after eating them.  

That's exactly what I've figured out in the last couple years of my journey.  BALANCE.  For me this means eating clean 80% of the time and indulging a bit.

It also means that I spend time trying new things and trying healthier versions of the foods I love.  Pizza is one of them.  

This recipe is definitely one you should give a shot.  You will love it and your family will too and it's healthier than most pizza's you'll order for delivery.  

Serves: 4 servings, 1/2 flatbread each

Ingredients:


  • 2 whole wheat flatbreads (or 6½-inch whole wheat pitas)
  • ½ cup barbecue sauce, reduced-sugar
  • 1½ cups shredded cooked chicken breast
  • ½ cup canned black beans, drained, rinsed
  • ½ cup corn kernels
  • ½ medium red onion, chopped
  • ½ cup shredded cheddar cheese
  • ¼ cup finely chopped fresh cilantro
  • 1 Tbsp. fresh lime juice


Instructions:


  1. Preheat oven to 350ยบ F.
  1. Place flatbreads on a large baking sheet.
  1. Spread barbecue sauce evenly on flatbreads.
  1. Top flatbreads evenly with chicken, black beans, corn, onion, and cheese.
  1. Bake for 5 to 8 minutes, or until cheese is melted.
  1. Top evenly with cilantro and drizzle with lime juice. Serve immediately.

Recipe tip:

Look for a barbecue sauce that has an ingredient list that does not contain artificial sweeteners, additives, or preservatives. There are many brands on the market that are sweetened with small amounts of honey, maple syrup, or molasses.
